Recipes
As a child I remember attending local fairs where my mother would enter baking and pickling in contests. She was very successful and there were many articles in the local newspaper about her winnings and some of her prize recipes were printed as well.
She became more confident and started attending the CNE competitions in Toronto.
In 1974 she set a record when she won the top award in the bread-and-butter pickles division. The pickles rated 99 points, the highest in the CNE.s history.
She is now 92 years old and she is still canning. Occasionally she helps out at the market stand and the recipes that she shares most often with our customers is her Dill pickle and pickled beets recipes.

Below are some of her favourite recipes.
Recipe for prize winning Bread-and-Butter Pickles
- Wash medium-sized cucumbers and slice paper-thin to measure one gallon.
- Eight small onions sliced thin.
- 1/2 cup pickling salt
- (If you want a little bit of red pimento for colour, add now).
Add enough ice cubes so when melted they will nearly cover the pickles and onion and add the salt. Let stand 3 hours or overnight.
Drain thoroughly in colander.
Bring .. To a rolling boil
- 5 cups of white sugar
- 5 cups of white vinegar
- a scant teaspoon of turmeric
- 2 tsps. Of mustard seed
- 1 tsp. of celery seed
Let boil for a few minutes. Add cucumbers and onions. Simmer and keep stirring with wooden spoon until they change colour. (about 10 minutes)
Pack in sterilized jars and seal.
Yields about six 16 ounce jars.
